VEGETARIAN DISHES

(MADE WITH OLIVE OIL)

Turkish Green Beans

(Taze Fasulye)

1 pound green beans

3 medium tomatoes

1 medium onion

1 teaspoon salt

1 teaspoon granulated sugar

¼ cup hot water

¼ cup olive oil

Coarsely chop green beans and put into the pot. Peel the tomatoes, remove their seeds, and cut them into large pieces. Chop the onion finely and add to the tomatoes, then combine with the green beans. Add salt, sugar, water, and olive oil. Place the pot on the stove, and when it starts to boil, lower the heat and cook for 40 minutes. Then, turn off the heat and set aside. Serve cool (preferably after keeping it in the refrigerator for one day).

Serves 4.
